In addition, Curds and Wine hosts free winemaking seminars in association with San Diego Amateur Winemakers' Society - this month Lum Eisenman will teach us how to make dessert wines. To celebrate National Cheese month this year we're giving out one free Fromage Blanc starter culture every cheese supply purchase of $20 or more in the store (sorry, does not apply to online purchases - in-store purchases only).
Fromage blanc has a flavor and texture similar to cream cheese or sour cream, and can easily be substituted in any recipes using these cheeses. Spread it on bagels with lox, capers and red onions, or toss pasta in fromage blanc then add fresh vegetables like peas, peppers, or squash and maybe a little bacon or prosciutto. It is one of the easiest cheeses to make at home. Just heat 1 gallon whole milk (anything except ultrapasteurized!) to 86° F in a non-reactive (i.e., not aluminum) pot and sprinkle on the culture. Let it rehydrate for about a minute then stir into the milk. Cover the pot and let sit undisturbed at room temperature overnight. The next day drain the soft curds in fine cheesecloth (butter muslin) for about 6-8 hours, and at the end of the day your cheese is done! Add a little salt to taste, or even stir in herbs, roasted garlic, or sun-dried tomatoes. Your cheese will firm up after a few hours in the refrigerator, and will keep for about 2 weeks - if it lasts that long!
Join us at Curds and Wine to learn how easy and rewarding it is to make your own cheeses at home! At this class you will learn the fundamental processes behind fresh cheesemaking as well as the techniques for making pressed cheeses and aged cheeses such as cheddar, gouda, and camembert. We will show you how to make fromage blanc, ricotta, and queso fresco, and demonstrate the processes involved in making feta, swiss-style cheeses and mold-ripened cheeses such as camembert/brie-style and blue cheeses. We will have samples of the various styles of cheeses you can make at home from Venissimo, as well as other refreshments. Finally, you will receive a packet with a recipe booklet to make the cheeses from the class as well as basic supplies to get you started with your cheesemaking. You will also receive a 10% discount on your total purchases in the shop following the class.

Take your winemaking to a new level! While wine kits are very reliable and straightforward, there are many things you can do to create an entirely different wine with the same kit. Join us to learn tips and techniques to make your wine kits unique! We will cover:

We now have a variety of glassware in stock for wine analysis and blending: titrator burets, graduated cylinders, flasks and beakers, as well as pipets and bulbs for transferring samples. We also have the color indicators and titration chemicals you need for most basic analysis.
We also do in-house analysis for most basic wine chemistry testing. You are welcomed to bring in as many samples as you want for free pH testing. Bring in a sample (see website for sample volumes) of your wine for unbound SO2, titratable acidity, L-lactic acid or malic acid analysis for $15/sample. We also now have an ebulliometer to determine alcohol concentration, samples are processed for $20 each. Please note we will process your sample as quickly as possible but it might take up to 24 hours to complete your analysis. Most tests are completed in the same day they are dropped off.

In association with San Diego Amateur Winemakers' Society, Curds and Wine will be hosting bi-monthly home winemakers' seminars. These seminars are held every even numbered month on the third Saturday at 1 pm. Seminars are given by Lum Eisenman, a winemaking guru that we are lucky to have in the San Diego area. Lum will share his expertise on various winemaking techniques and issues. This month Lum will tell us how to make dessert wine.
