Curds and Wine opened our doors on November 11, 2010.  In these past six years we have met so many wonderful people.  Thanks to all of you for helping us make Curds and Wine one of the happiest places to be!

Cheesemaking Fundamentals Classes in November and December

Join us at Curds and Wine to learn how easy and rewarding it is to make your own cheeses at home! At this class you will learn the fundamental processes behind fresh cheesemaking as well as the techniques for making pressed cheeses and aged cheeses such as cheddar, gouda, and camembert. We will make fromage blanc, ricotta, and queso fresco, and demonstrate the processes involved in making feta, swiss-style cheeses and mold-ripened cheeses such as camembert/brie-style and blue cheeses. We will have samples of the various styles of cheeses you can make at home from Venissimo, as well as other refreshments. Finally, you will receive a packet with a recipe booklet to make the cheeses from the class as well as basic supplies to get you started with your cheesemaking. You will also receive a 10% discount on any purchase in the shop following the class.


Class size is limited to 18 participants. Ticket holders ONLY admitted to class.

January 2016 - Cabernet Franc Yakima Valley, Washington $167.95
Sitting at the same latitude as the Loire Valley, the cooler climate of Yakima Valley is perfect for Cabernet Franc grapes with 17 hours of summer sunshine per day (more than California).
Tasting Notes: Ripe raspberry and red currant notes with black pepper and fresh mint leaf notes. Solid tannin providing mouth feel and structure.
Food Pairings: Herb crusted lamb; Paprika-rich Goulash stew; Aged Cheddar
Sweetness: Dry | Body: Medium | Oak: Medium | ABV: 13%

January 2016 - Vermentino Tuscany, Italy $161.95
Located on the Tyrrhenian Sea, which gives the area a warm Mediterranean climate. The terrain is quite hilly and these hills serve as a tempering affect on the summertime heat.
Tasting Notes: Expressively refreshing Peach, green apple and fresh lime. Hint of tarragon on the finish. Sip-worthy on its own. Quenching acidity
Food Pairings: Regional Italian cuisine like pasta tossed in olive oil; Fresh shellfish; Grilled chicken or turkey
Sweetness: Dry | Body: Light-Medium | Oak: None | ABV: 12.5%

February 2016 - Milagro Valencia, Spain $167.95
Most vineyards are located inland; topography is mountainous which provides the grapes a much needed cool down in the evening.
Tasting Notes: Tempranillo, Garnacha and Bobal bring lush and hedonistic qualities. Cabernet Sauvignon and Syrah offer body and structure Notes of black and red fruit, cherry cola, anise and white pepper. Powerful yet subtle mouth feel.
Food Pairings: Braised meats, rich sauces
Sweetness: Dry | Body: Medium-Full | Oak: Medium-heavy | ABV: 13%

March 2016 - Blanc De Noir San Joaquin Valley, California $161.95
California's largest wine region. Agricultural haven and is known as the "food basket of the world." Deep fertile soils and cool Delta breeze
Tasting Notes: Blanc De Noir is a French term which means "white wine from dark grapes." No skin contact after pressing keeps color light and tannins at bay. Crabapple, white peach, grapefruit and hint of strawberry. 
Food Pairings: Sliced Ham; Grilled white fish; Eggs benedict
Sweetness: Off-Dry | Body: Light-Medium | Oak: None | ABV: 13%

April 2016 - Grenache Cabernet Riverland, Australia $189.95
Woven around the Murray River with Mediterranean climate and long days of sunshine. Sun-kissed, vibrantly ripened grapes.
Tasting Notes: Full bodied blend of Cabernet Sauvignon and Grenache; Black currant, cigar box, black cherry and raspberry. Warm spice rounds out the finish
Food Pairings: Protein-rich dishes like grilled steak Avoid spice or heat
Sweetness: Dry | Body: Medium-Full | Oak: Medium-heavy | ABV: 13%

RJ Spagnols Restricted Quantity 2017 Wine Kits - French Classics

Each year RJS Craft Winemaking offers home winemakers an exclusive selection of outstanding wine kits, developed to feature the best results from grape harvests around the world. January 2017 Release - L'Elegance Cabernet Sauvignon $174.95

Born of accidental breeding in 17th century France, L’âge d’Élégance has inherited its flawless balance of subtlety and daring from its wildly rich parentage. Complex and concentrated with spice notes, red fruit and vanilla on the nose. This is a rich, full bodied wine with structured tannins and a long finish.

February 2017 Release - Grace Chardonnay $154.95

Centuries old, cultivated by French monks, and named for the village of Chardonnay, L’âge de Grace is a wine that is both simple and regal. Densely textured with a steely minerality and creamy mouthfeel. This is an unoaked Chardonnay with notes of citrus, honey and melon on the palate, finishing with crisp green apples.

March 2017 Release - Luxe Merlot $174.95

Named after the French bird Merlau, this late 17th century wine is the epitome of L’âge de Luxe, known for being luxuriously ripe and soft. Ruby red color with aromas of juicy blueberries and cherries on the nose. This luxurious wine features ripe cherries, blueberries, a touch of spice, and soft tannins on the palate.

April 2017 Release - Vaillance Sauvignon Blanc $154.95

Named from the French word sauvage, meaning wild, this valiant vine once grew wild in France. L’âge de la Vaillance is refreshingly crisp and dry. Pale lemon color with pronounced aromas of grapefruit, grass and gooseberries. This classic wine is dry yet invigorating, with flavors of citrus and grassy notes on the palate.

Fun with Oak Alternatives and Tannin Trials

Harvest season is finally winding down.  Now our wines will rest for several months before bottling.  During this time you might want to "tweak" your wine to add some complexity or mouthfeel.  One way to do this is to add oak - but you don't need to invest in a barrel!  Several oak alternatives are available, including chips, cubes, and spirals.  One fun way to see how these will affect your wine is to set up oak trials in small batches.  Using gallon or half gallon jugs, or even large Mason jars, you can add small doses of different types of oaks to your wine to see how they influence the flavors and even the color of your wine.  Leave oak alternatives in for at least 4 weeks, then start tasting the samples every week.  Make lots of notes!  
You can also make changes to your wine with direct addition of finishing tannins.  We have both powdered and liquid tannins available to give your wine a little boost.  Powdered Tannin Riche is derived from French oak and adds hints of coconut and vanilla together with a perception of sweetness. It can contribute the final touch to your wine.  A little goes a long way!  Three liquid tannins are also available - Mocha, Vanilla, and Fruit Enhancer Plus.  Each of these lend subtle differences to the wine.  Set up a tasting trial with each of these finishing tannins in small doses to see how they can turn your wines into something special!  
For a really fun time, have a tasting party and invite your friends over to see how these additives can bring your wines to a new level, and even blend combinations of different oak/tannin additions.  Share the joys of winemaking!
