What's New at Curds and Wine


We have an all-new point of sale system at Curds and Wine, and will soon have a new website as well.  We now have a chip reader and take Apple pay and Android pay, as well as Visa, Mastercard and American Express in store; the current website only takes Visa and Mastercard, but the new website will also accept American Express.  We had to transfer all existing gift certificates to our new platform, if you have existing online gift certificate these have been transferred to in-store gift certificates.  Unfortunately we can currently only apply gift certificates in store, please contact us by email or phone if you would like to use a gift certificate for an order to be shipped.  We apologize for any inconvenience during this transition and greatly appreciate your patience as we learn our new system.  Your feedback on our new website is especially appreciated once it is up.

We also have some great new wine kits from Winexpert and RJ Spagnols, including a special Limited Release "Bravado" Super Tuscan and a refreshing French Rosé!  We also have the last of the RJ Spagnols Grand Cru Petite Sirah wine kits, which has been discontinued - grab one before they're gone!  Not only is Petite Sirah a tasty single varietal wine, but super for blending to add color and complexity to any wine, including your fresh grape wines.

We also now carry several Vinegar Mothers, as well as new liquid tannins for adding just the right finishing touch to your wines before bottling.  Besides all of our new offerings, we always have all the basic winemaking and cheese making supplies you need all year long! 

Basic Winemaking from Fresh Grapes Crash Course Saturday August 13 at 1 pm

Punching mustJoin us at Curds and Wine to learn the basics of making wine from fresh grapes!  We will go through the processes involved, chemistry testing, and the equipment you will need, with demonstrations of the use of equipment commonly used for winemaking.

•  Wine analysis and adjustments
•  Stabilizing and aging wine
•  Review of equipment and ingredients needed for all processes

 *Must be 21 or over to attend.  Paid participants ONLY admitted to seminar.

Purchase of fresh grapes is not included; grapes must be purchased separately and wine made at home from fresh grapes.  No wine is made in this class!

Winexpert Limited Release Bravado Super Tuscan

bravadoEclipse Bravado Super Tuscan is a blend of traditional Tuscan grapes, including Sangiovese, blended with traditional Bordeaux grapes, like Cabernet Sauvignon and Merlot. The result is a very classic but non-traditional wine that provides a "wow factor." Complete with grape skins Bravado is a medium ruby color with inviting aromas of dried fruit and smokey leather notes. The palate is round and full with rich cherry and plum leading to warm vanilla and a hint of spice.

New Item: O-MEGA Malolactic Bacteria

O-MegaO-MEGA™ selected wine bacteria was isolated and selected in the south of France by the Institut Français de la Vigne et du Vin (IFV) in Burgundy for its capacity to quickly achieve malolactic fermentation (MLF) in a wide range of applications. O-MEGA™ is a secure and effective strain that tolerates low pH or high alcohol conditions, and is easy to use. O-MEGA™ complements fresh and fruit-driven wines, and helps stabilize red wine color by degrading acetaldehyde more slowly.

  •  pH tolerance >3.1
  •  Temperature tolerance >14°C (57°F)
  •  Alcohol tolerance up to 16% per volume (can tolerate up to 17% per volume)
  • SO2 tolerance up to 60 mg/L total SO2
  • Good implantation and short lag phase
  •  Very fast MLF kinetics
  •  Low nutrition demands.
  •  Delayed degradation of acetaldehyde results in higher color intensity.
  • No production of biogenic amines.
  • Very low volatile acidity production.
  • May also be used for co-inoculation.
  • Late degradation of citric acid: very low production of diacetyl (no buttery or lactic notes).
